This is an extra healthy and tasty recipe for those cold days of the winter that you want something to keep you energized and warm. Even though in Cyprus we don’t have many cold days, these past few days have been quite cold so a tasty and healthy soup is always welcome.

The best thing about this soup is that it is very easy and quick!

So here are the ingredients:

Note: The quantity I give is indicative, let yourself be guided and see whether you want to use more of something or less.

1 cup lentils

3 carrots

2 large potatoes

2 onions (I used red onions but you can use any type you like)

1 tomato

3/4 bunch of celery greens

3/4 bunch of spinach

Himalayan salt

pepper

turmeric

water

Soak your lentils in water for a good couple of hours. It will make cooking much faster. (Alternative, if you didn’t soak them then boil them first until almost tender and then add the rest.)

Boil your lentils, potatoes, onions and your carrots until soft. They will boil faster if you cut them in small pieces. I usually put them in the blender and cut them in small cubes so they boil extra fast. When they are ready add in your tomato, celery, spinach, salt, pepper, turmeric and any other spice you like. Let it boil a bit longer. 5 to 10 min should be enough.

Check not to have too much water, usually it’s enough just to cover the vegetables. You can always remove or add water according to the consistency you like the soup.

Blend all the ingredients until it becomes almost smooth.

You can top it with some crunchy sprouts. I had freshly made mung bean sprouts.
