This is the most easy, quick and delicious salad. The creation story goes a little bit like that:

So I was in the kitchen, hungry with nothing prepared and I just wanted something light and quick to eat. What usually happens is that I open my fridge and I take out all the greens! I remembered I had some quinoa, so I boiled it as well and then I just put it all together. They formed a delicious, colourful and easy on the stomach and low on calories salad!!

Having a good and healthy nutrition does not necessarily mean that you need to spend too much time or money on what you are eating. Eating healthy is something that does not necessarily need a lot of preparation, it might even need less than an ordinary, time consuming unhealthy meal that is so popular in the world today. The thing is to be prepared at home and by being prepared I mean to always have some fresh vegetables and fruit in your fridge. It’s not so difficult!

For example, I always have spring onions, tomatoes, and cucumbers in my fridge. Also, I almost always have any other type of green that is in the season, and I can find at the grocery store, like broccoli, rocket (arugula), parsley, coriander, lettuce, celery etc.

Quinoa has become very popular due to his high protein content, vitamins B, phosphorus, magnesium, zinc and iron. It is considered a superfood. Beetroot is also very important and research has shown that beetroot juice can lower blood pressure, helps to fight heart diseases. In  Roman times and it was used to treat fever,  constipation, wounds,  skin problems – and was also used as an aphrodisiac.

Ingredients:

1 beetroot (boiled)

1/2 cup of quinoa

1 green bell pepper

1 tomato

1 cucumber

1 or 2 spring onions (I love them so I used 2 here)

1/2 avocado

the juice of 1/2 lemon (you might even use the juice from the whole lemon depending on how acidic you like it)

Himalayan salt (to taste)

sprouts (optional) for garnish

Black olives (optional)

Preparation:

Boil the quinoa in 1 cup of water until ready. You can see that it’s ready when it starts to crack and you can see the white inside. Cut in small cubes the rest of your ingredients. Add all together and dress with the lemon juice and salt. You can also use some olive oil if you like or add in the salad some  good quality black olives like Kalamata olives.

You can garnish with sprouts.
